Quick Dinner Potato Rolls

Thanks again Janet for a super yummy recipe! We love these!


1/2 cup milk
1/4 cup shortening
3 T sugar
1 t salt
1/2 cup mashed potatoes
1 egg, beaten
1 pkg. yeast dissolved in 1/4 cup warm water
2 1/2 cup flour


Bring to boil 1/2 cup milk

Take off of heat and add 1/4 cup shortening, 3 T sugar, 1 t salt, 1/2 cup mashed potatoes.

Stir well. Add 1 beaten egg.

1 pkg. yeast (dissolved in 1/4 cup warm water)

Add 1/2 of 2 1/2 cup flour. Beat well

Add remaining flour to make dough. Knead slightly-30 seconds.

Cover and let rest about 15 minutes.

Roll out dough about 1/4 inch thick.

Cut into 3 inch rounds.

Fold over and place the rounds onto baking pan.

Cover and let rise until double.

Bake at 400 for 10-15 minutes.
