Pudding Chocolate Chip Cookies

 I found this recipe over at My Favorite Things.  These cookies are so soft and have a perfect crunch.



1 cup of softened butter
1/4 cup sugar
3/4 cup lightly packed brown sugar
2 eggs
1 tsp vanilla
1 (3.5 ounce) box of instant vanilla pudding mix
2 1/4 cup flour
1 tsp baking soda
your favorite chocolate chips...semi-sweet, milk or white!

Cream the sugars and butter in a large bowl. Mix in the egg, vanilla, and pudding. Slowly add the flour and baking soda, and the chips last. Mix just until well combined.
Roll into 1 inch balls and place on a cookie sheet about 2 inches apart. Bake at 375 degrees for 7 to 10 minutes. You do not want to over cook these!! Then place on a rack to cool.
